LUV - I have used chicken and really like it.

My friend makes meatloaf in her crock pot all the time and swears it's her family's favorite meal. I'm the only one in my house who ever ate meatloaf so I haven't tried it.

Fox - If we could only find out what McDonalds does to their fruit and walnut salads we'd be set. Those apples never turn! I started nibbling on one once at 8:30am and by noon the apples looked just as fresh. Whatever it is, it's probably bad for you anyway.

Does anyone have a good solution for keeping apples once they are sliced? Living in this area 'fresh' isn't always and once you cut an apple the darn thing starts to turn brown in 30 seconds flat.

There is the greatest cookbook for slow cookers (aka crockpots) called "Fix it and Forget it". It's chock full of receipies - the ones I've tried have been big hits here. The biggest suprise was the crockpot meatloaf - have to say I was really skeptical about that one, but it worked!

So, dust off them crockpots ladies/gents and give them a try! :D

CC, printed off your recipe to see if the family would eat it. They are so picky. Have you ever made it with chicken?

Crock Pot Fajitas are yummy. It cooks all day. When you get home all you have to do is open a pack of flour tortillas. If you want to get fancy you can cut up some fresh tomatoes and lettuce and put out some sour cream. Here's a good recipe I got off the net:

Flank steak is cooked in the crockpot with seasonings then used to make fajitas.

INGREDIENTS:
1 1/2 pounds beef flank steak
1 large onion, quartered and sliced
1 sweet bell pepper, cut into thin slices
1 jalapeno pepper, seeded and chopped
1 tablespoon chopped cilantro
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 cup chopped tomatoes
12 flour tortillas
Optional Toppings:
sour cream, guacamole, shredded Mexican blend cheese, chopped tomatoes, shredded lettuce, salsa, sliced olives, etc.
PREPARATION:
Cut flank steak into 6 portions. Combine meat, onion, bell pepper, jalapeno pepper, cilantro, garlic, chili powder, ground cumin, ground coriander and salt in slow cooker. Add tomatoes; cover and cook on LOW for 8 to 9 hours.
Remove beef from slow cooker and shred. Return meat to slow cooker. Stir. For the fajitas, spread meat mixture onto warm flour tortillas and add your favorite toppings.
Serves 10 to 12.
