I'll do chilli and harvest soup


We do Pancakes or Scrambled Eggs (Grn, Red Peppers, 4 kinds of cheese and onions (kids dont know), bacon- Breakfasts for dinner 1-3 times a month.

My kids think its funny 'Dad makes Breakfast for Dinner'


Quick meals:
Sliced kelbasa
sliced potatoes (potatoe chippish size)- OK this takes awhile depending on how many sliced
1 or 2 onions
1 can corn (or frozen or shucked and cut off)


(Any) oil heated in pan (Canola or Olive Oil preferred by me)
Toss in potatoes cook till almost brown
Toss in Kelbasa, Onions when Poatoes halfway done
Toss in corn when potatoes almost golden brown

Cover for 10 min on med heat

Serve - Ketchup or A-1 sauce recommended on top

I read that same article! It does sound like fun~anyone up to coming to Maine on Sunday to cook? ;)

We usually have breakfast or nuggets on Meeting night or if I'm running late on grocery day. My kids love it-they would eat mac-n-cheese every day if I let them. I always feel so guilty doing frozen/box/can/fast food/breakfast suppers. Que sera, I guess...they are both healthy & normal weight!

I double up on things I know freeze well when I cook like meatloaf and spaghetti sauce. I also buy a bigger roast then we can eat and freeze the leftovers to use another time for bbq beef or pork sandwiches. I read some magazine article a while back about a group of friends who got together a couple times a year and did the cooking thing. They would make huge batches of favorite recipes and then everyone would take some of each home to freeze. I think they drank a lot of wine and gossiped while they cooked. It sounded like a blast. A couple of them even came from pretty far away.

We do breakfast for supper a couple times a month. French toast, pancakes, scrambled eggs with ham and cheese are all pretty quick and simple meals.

I overheard my oldest son telling my middle son not to eat a sandwich for lunch today because the bread was almost ready for french toast! I thought that sounded pretty good for dinner, so that's what it will be tonight.
You guys should look into those places that you go to and make meals for the month ahead of time. They sound kinda fun. I usually make a few things ahead of time when we don't have too much stuff going on or I can't sleep. The other day I made a couple of lasagnas and a few servings of chili for the freezer.

Whenever my dad had to go on a trip my mom would stock the freezer with that great 70s invention TV dinners. We'd all make a big deal out of going to the grocery store and picking out the ones we wanted. Then, whenever we got hungry we'd pop one in the oven. I always picked salisbury steak and turkey and dressing.

Here's a yummy and easy thing to make - Italian Chicken. It's Italian Beef but cooks faster, is leaner and tastes just as good! You can throw it all in the crockpot for a few hours or on the stove to be done in just one hour.

Four large skinless/boneless chicken breasts
One can beer
One can beef stock
One jar pepperoncini peppers (juice and all)
2 tbs Italian Seasoning
1 tbs Garlic Powder (can substitue fresh/minced/etc)

Cook until meat is tender and can be shredded. Serve on hoagie or sub sandwhich rolls.
