Oh yeah, I have a recipe similar to ScottMom's and it's so yummy this time of year! It's warm, cheesy, melty..... A good dinner rolls sops up the cheesy sauce. Maybe we'll have this for dinner next week.

Chicken Casserole

1 Whole Chicken
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 box Velveeta Cheese, cubed (med size box)
1 can PET Evaporated Milk (small can)
1 can Chow Mein Noodles (small can)
Crushed Potato Chips about 1 or 2 cups to taste)

-Boil chicken, remove skin and bones, shred
-Combine all ingredients (except potato chips) in casserole dish
-Cover with crushed potato chips
-Bake at 350 about 30-45 minutes or until cheese is melted, dish is heated through and top is browned
-Serve with biscuits, crescent rolls, dinner rolls or other bread of choice

Some recipe notes:
-I prefer using skinless, boneless chicken breasts
-Trust me - PET evaporated milk and Eagle Brand sweetened condensed milk are not interchangeable :(
- I like to bake mine in a 13x9 pan so you get more of the crusty topping - but a bowl type dish works fine too

CC--yup yup yup...I just leave out the raisins and almonds and use shredded cheddar (looks very pretty)and I think I've put in some sort of nut before but have taken to leaving it out cause hubby doesn't care for them. I Luuuuvvvvvvvv that salad, as does everyone that I've ever made it for.

Oooo, sounds like you ought to post that idea on the Brainstorming thread. We all need those kinds of recipes. Do I smell a new fundraiser idea?????

My husbands entire family is terrific. I definitely won the in-law lottery. I can't even call them in-laws. They're my sisters, brothers and parents.

Now my family is a whole other story. There's a group that can send you screaming for cover. Has anyone ever heard of twins being switched at birth and given to the wrong family? That's the theory my brother and I have been working on for the past 20+ years anyway....

How about a whole PTOtoday cookbook? Sections on Pot Luck, Teacher Appreciation luncheons, Big Group recipes, Birthday and Class Party Treats, Quick "I've got a meeting tonight" Meals, Show Your Family How Special They Are Meals, and Anything Chocolate.

I live next door to mine, too. We have slowly built a better relationship. I think, in my case, it's always hard when you marry the baby. I was also somewhat shell shocked to marry into such a huge family. But once I started popping out kids and left work to be home with them (sounds really old fashioned) she started to come around. There family is just very different from mine. She may love me to peices and I will never know because they just aren't like that. She did give me the best compliment ever to my mother. She said she would rather watch all 3 of my children than anyone of the other 6. You can't beat that as a mom.
On another note, I think Tim should take our recipes posted on this site and make a section in the next magazine for them! If you look way back, I believe there is a recipe for Torte de Ricotta. I made that a few years back for a teacher event and it's a great success.

Ooo Lucella, shades of Everybody Loves Raymond?

Mine used to be great. Now she's too busy traveling all over Illinois to social events and meetings with the organizations she belongs to. She also seems to feel the need to attend every visitation within a 30 mile radius of her home, because she somehow, some way knows everyone who dies in a three county area. She hasn't made it to a single sports activity the kids have had this fall and she won't be at my son's birthday party because she'll be traveling to some meeting in southern Illinois.

I miss the mother-in-law who used to call me for lunch and show up after school to hang out with the kids.
