Onarollpto has a great list.
Also contact your local hospital. Ours has a great educational program and they do assemblies and provide great information on classes about hygiene, fitness, adolencense, etc.
What about information on local town recreation programs to get the kids to sign up and try out new sports. or invite coaches from the high school to come and speak about the programs there. Students may be motivated to begin to practice more if they want to join the HS team.
We had a local karate school come and demonstrate moves or techniques and then teach kids simple moves for personal safety should they be approached or grabbed by a stranger. Karate is also a great way to get in shape.
See if you have a nutrionist in your area that can come and teach about diet and how it can help with your skin, growth & puberty.
Our Blood Bank will come and speak to students about the importance of donating blood. I know its a stretch, but if you are fit, you may not need to receive a blood donation; but you can consider giving when older!

I should add that our fair covered an elementary school of K-3, about 650 kids. I believe a lot of what we did could also be used at your school or even tailored easily for the 5th/6th graders.

Our school did one of these a couple of years ago. To begin we took a look at all of our local resources and came up with different stations, then a schedule for each class throughout the day where teachers chose X number of stations to visit that seemed to fit their classes the best. It was a big hit.

Examples of stations we had were:
1. Yoga (teacher handled who was a part-time instructor)
2. Bike Safety course (parent who's a state trooper)
3. Healthy Dental Hygiene (local dentist's office)
4. Outdoor games (phys ed. staff)
5. Healthy snacks (local grocery store and peanut free)
6. Basic first aid (school nurse - bruises/ice; cuts/wash&bandaid, etc)
7. Massages for the teachers (local office)
8. Germs (local group - used one of the lights that "glows" the germs!)

That's all I can think of at the moment. I'll try to think of more. Hope it helps.

Help ! ASAP! I need to konw how to run a health / Fitness Fair. Where do I begin? This will be held on Oct 19th for a school of 1,100 5th & 6th graders.
