Reading Night Help Please

Ok, here's my delima. Two months ago we held our first meeting and had 12 parents in attendance, I have lost all my old "regular" volunteers to middle school. Almost a whole new group. Our meeting this month consisted of myself, two new parents and the principal. We scheduled our first reading night for this month in September. I found out a couple days ago that the person who volunteered to chair, has other things she decided to do and can not and has not worked on the event. The two event co-chairs are new and had not worked on this either. They also did not show up for this months meeting. In order to save the event, I took this over, along with the Christmas shop that I am chairing alone. Now, I am over whelmed. I had a couple new parents who have called some people and found two community leaders who have agreed to come and read, but still need more. We are going to have cookie and punch, not a problem. Question, do most of you do activities also or us this just a reading night? I am afraid that if I schedule too many activities, I will not have enough help. Yet at the same time, afraid that if I play it safe, and cut back on the activities, that the parents will feel that it was not worth their time. Any suggestions? I liked the idea of putting poems up on a wall and having children jump rope and read them, especially since our school is name ed after a childrens poet. Any other easy ideas? I can really use your help, the Christmas shop set-up starts the day after our reading night.
